Food Ingredient of the Week - March 12th

Delicata (Cucurbita pepo)

Do you have squash left in your food cellar? Pantry?

Is Winter Squash on sale this week at your local grocery store?



FUN FACTS

Can you eat the skin? YES

Can you eat the seeds? YES, Roast them like pumpkin seeds

Can You Eat All of a Delicata Squash? YES


Winter or Summer Squash? Considered a winter squash, but is in the same family as yellow summer squash and zucchini


Storage: Can be stored for up to three months in a.cool, dry place. No refrigeration necessary and should be avoided.


Nutritional Benefits: potassium, dietary fiber, magnesium, manganese and Vitamins C and B




HOW TO EAT

Pasta Add -in


Soup


Quick & Easy Side Dish

Roasted, Sliced

1. Preheat oven to 425 degrees F

2. Line a sheet pan or cookie sheet with parchment paper or lightly grease pan

3. Remove seeds with a spoon and save for roasting

4. Cut squash in half lengthwise

5. Slice into1/4 inch to 1-inch thick slices. The thinner your slices the crispier.

6. Toss the squash slices with olive oil, salt and pepper.

7. Optional – Toss with cinnamon, nutmeg, ginger or nutmeg

8. Lay the slices in a single layer on the sheet pan

9. Roast for 20-30 minutes, or until soft and freckled brown


Roasted, Halves

1. Preheat oven to 425 degrees F

2. Line a sheet pan or cookie sheet with parchment paper or lightly grease pan

3. Deseed, and cut squash in half lengthwise

4. Pierce each half once with a paring knife

5. Brush halves with olive oil and sprinkle with salt and pepper

6. Place the squash cut side up or cut side down on pan. If you roast cut side up you can add butter, and/or warm spices

7. Roast for approx.. 30-45 minutes
